Eggplant Pizza

The best part about this recipe is that its what I like to call an assembly meal. Assembly meals are meals that can me made from ingredients used in other meals. For this recipe you will need Marinara Sauce, pre-made whole wheat pizza crust, kale, eggplant, and caramelized onions. Although these toppings are what I choose, keep in mind that pizzas can be topped with anything. No, ABSOLUTELY ANYTHING!! Personalize them with the toppings you like or just throw on that corn you've been needing to get out of the fridge. This eggplant marinade is super simple to make and so delicious that it fits a wide variety or other veggies too; don't hesitate to switch things up. This recipe wont disappoint. Egg plant marinade

  • tomato paste | 1 tbsp

  • olive oil | 1 tbsp

  • onion powder | 1 tsp

  • garlic powder | 1 tsp

  • liquid smoke | 1 tsp

  • agave | 1 tsp

  • salt n pepper | to taste

  • basil | 1 tbsp

  • water | 1/4 cup

  1. Pre-heat oven to 375 degrees

  2. Whisk together all ingredient then toss in the eggplant to marinade; approx. 20 min

  3. Heat saute pan to medium heat and cook eggplant on both sides; 5 min each side

Caramelized onions

  • onion | 1 ea

  • coconut oil | 1 tsp

  • Agave | 1 tbsp

  • salt n pepper | to taste

  1. In a saute pan with medium heat, saute onions with coconut oil.

  2. Once onions are translucent, add agave and season with salt n pepper.

  3. Slice kale; massage with 1 tsp olive oil, salt n pepper

  4. Assemble pizzas and bake in the oven for 10 min.

  5. Enjoy with a huge smile!
