Vegan Pad Thai

  • Rice Noodles | 1 bundle

  • coconut oil | 1 tbsp

  • liquid amino/ soy sauce | 2 tbsp

  • rice vinegar | 2 tbsp

  • chili paste | 1 1/2 tbsp

  • honey/ agave/ maple syrup | 2 tbsp

  • spices: chili powder, onion powder, garlic powder

  • Veggies: bean sprouts, carrots, onions, peppers, cabbage, kale, etc.

  1. Soak rice noodles in warm water and set aside

  2. Saute veggies with coconut oil; Season your veggies; note that salt is not necessary because of the liquid amino and rice vinegar. Cover veggies for 5 min.

  3. Add liquid amino, chili paste, honey to the veggies to create a sauce. Cover for 5 min

  4. Stir in rice noodles into the vegetables and sauce. Allow noodles to soak in flavor for 5 min.

  5. Enjoy pad thai topped with peanuts and sesame seeds.
