Crabless Cakes

INGREDIENTS

2 (16 oz.) cans Chickpeas

1 (16 oz.) can Heart of palm

1 c Artichoke hearts

1/2 Nori sheet

2 tbsp Tahini

1 tbsp Old bay seasoning

1/2 c Panko bread crumbs

DIRECTIONS

  1. Rinse and drain the chickpeas, heart of palm, and artichoke hearts.

  2. Shred the nori sheets into tiny pieces using a blender or ninja.

  3. Place the chickpeas, heart of palm, artichoke hearts, nori, tahini, and old bay seasoning in a food processor. Blend ingredients until well blended. The mixture should resemble crab meat.

  4. Refrigerate the mix for 1 hour to let it firm up.

  5. Using an ice cream scoop, scoop out the cakes. 

  6. Flatten them like patties then coat them in the panko breading

  7. Heat a skillet or griddle to medium heat. Drizzle surface with olive oil, cook patties for 10 minutes, flipping halfway through.

  8. Enjoy!! I had 2 cakes with a vegan caesar salad. It was so delicious I forgot to take a photo!! I just dove right in!
