Tofu Scramble Recipe

INGREDIENTS

2 pkg extra firm tofu

2 tomatoes (diced)

1 onion (diced)

1 bell pepper (diced)

2 cloves garlic (minced)

1 bunch spinach

1 c nutritional yeast

1 tsp paprika

1 tsp chili powder

2 tsp onion powder

2 tsp garlic powder

2 tsp cumin

1/4 tsp tumeric | for color

TT salt & pepper

1 tbsp coconut oil

DIRECTIONS

  1. Drain tofu and press out as much water as possible. Set aside

  2. Warm a non-stick skillet over medium heat. Add coconut oil

  3. Add the garlic, pepper, tomato, spinach, and onion to the pan and saute for a few minutes until the vegetables start to soften.

  4. Using your hand, firmly squeeze the dried tofu, crumbling it into the pan. 

  5. Saute the tofu for 5 minutes then add in nutritional yeast, paprika, chili powder, onion powder, garlic powder, cumin, and tumeric.

  6. Cook, stirring, for about 5-7 minutes until the tofu is starting to brown and the pan is becoming dry. If the pan gets to dry while it’s cooking, just add 1 tbsp of water at at time, as needed.
