RECIPE
- 2 lbs Sweet potato (approx. 2 large sweets or 5 cups)
- 1 c Orange juice
- 1/2 c brown sugar
- 2 Tbsp vegan butter
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 c pecan pieces
Method of Preparation
- Preheat oven to 350 F.
- Slice sweet potatoes into 1/4 inch rounds. Set aside.
- Heat a medium sautee pan. Add vegan butter and sautee pecan pieces until fragrant.
- Add remaining ingredients and simmer for ten minutes.
- Arrange sweet potatoes in baking pan in one layer. pour sauce over potatoes and bake for 30 minutes or until potatoes are tender.
