Vegan Candied Yams

RECIPE

  • 2 lbs Sweet potato (approx. 2 large sweets or 5 cups)
  • 1 c Orange juice
  • 1/2 c brown sugar
  • 2 Tbsp vegan butter
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 c pecan pieces

Method of Preparation

  1. Preheat oven to 350 F.
  2. Slice sweet potatoes into 1/4 inch rounds. Set aside.
  3. Heat a medium sautee pan. Add vegan butter and sautee pecan pieces until fragrant. 
  4. Add remaining ingredients and simmer for ten minutes.
  5. Arrange sweet potatoes in baking pan in one layer. pour sauce over potatoes and bake for 30 minutes or until potatoes are tender.
  6. ENJOY!!
