Cauliflower Mac and Cheese

  • 1 head Cauliflower

  • 1 ea. potato

  • 2 ea. carrot

  • 1/2 tsp. onion

  • 1/2 tsp. garlic

  • 1/4 c. coconut oil

  • 1/2 c. non-dairy milk

  • 1/4 c. nutritional yeast

  • 1 tsp. salt

  • 2 slices vegan bread

  1. Preheat oven to 400 F

  2. Chop cauliflower into 1/2 inch cubes. Bake in the oven on a sheet tray for 15 minutes.

  3. Peel and dice carrots and potatoes. Boil in a pot of water until tender.

  4. Using a high-powered blender add remaining ingredients along with the carrots and potatoes drained. Blend until smooth

  5. Fold cheese sauce into the cauliflower.

  6. Toast two slices of vegan bread. Crumble toast until bread crumbs form. Top the bread crumbs on the "pasta".

  7. Bake for 10 minutes
