Vegan Greenbean Casserole
RECIPE
- 2 lbs green beans
- 1 Tbsp olive oil
- 1 Tbsp garlic (minced)
- 1 ea onion (diced)
- 1 Tbsp flour
- 3/4 c water + 1 vegcube (heat water and whisk to make a broth( 3/4 c veg broth is an acceptable substitute))
- 1/2 c cashews (soaked over night)
- 1/4 c almond milk
- salt and pepper to taste
Mushroom Steak Strips
- 8 oz Mushrooms (sliced thin)
- 1 Tbsp olive oil
- 2 Tbsp brown sugar
- 1 tsp liquid smoke
- 1 Tbsp liquid aminos (soy sauce)
- salt and pepper to taste
Method of Prep: In a large heated sauce pan, add 1 tbsp of olive oil. Sautee mushrooms until they begin to release their moisture. Add remaining mushroom steak strip ingredients and saute until mushrooms become crispy and small. Remove from the pan and set aside. Try not to eat all of them.
Onion Straws
- 1 onion (thinly sliced)
- 1/2 c flour
- 1 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp cayenne pepper
Method of Prep: Fill a large sauce pan 2/3 full with frying oil and bring to temp. Whisk together seasoning and flour. Toss onions in flour and fry until crispy. NOTE: Shake it all up in a bag. It makes for easy clean up.
Method of Preparation
- Preheat oven to 350 F.
- In a large pot, bring water to a boil. Blanch the green beans and set them aside. Blanch: parboil the veggies until slightly cooked. Remove from the water and soak in ice water or cold water to end the cooking process.
- In the same large sauce pan(from mushrooms) add 1 Tbsp of olive oil. Sautee the garlic and onions until tender. Remove half of the onions adding them to the mushroom steak strips.
- Add flour to the remaining onions and sautee until lump free and well incorporated. Add veg broth, seasonings, & cashews then simmer for ten minutes.
- Transfer mixture in a high powered blender and blend until smooth. Toss sauce in mushrooms, onions, and green beans.
- Bake for 20 minutes. Top with fried onions right before eating and bake for an additional 10 minutes.
